We don’t know about you, but for us, the holidays always mean helping ourselves to a serving (or three) of confectionary delights. For us, said confections often come in the form of cookies (and lots of them). We’re not talking about the plain ol’ chocolate chip or sugar variety. This season we’re going full-nine and indulging in some Christmas Nut Cookies — our favorite baked goods that are bursting with zesty, nutty, and chocolaty flavor. So, whip up a batch of these babies for some sweet treats to put out for Santa this year. Trust us, he will certainly approve.
300 g flour
1 tsp. baking powder
300 g brown sugar
25 g vanilla sugar
2 tbsp. flaxseed
330 g butter
6 tsp. orange jam
200 g chopped almonds
200 g crushed hazelnuts
200 g dark chocolate
Mix 2 tbsp. flaxseeds with 30 ml warm water and use a hand mixer to a puree.
Blend the mixture with 300 g flour, 100 g brown sugar, 10 g vanilla sugar, 130 g margarine and 1 tsp. baking powder with a mixer. Your dough is ready!
Roll out the dough on a baking tray and spread a layer of orange jam over the dough.
Melt 200g butter in a pot. Add 200g sugar, 15g vanilla sugar and 4 tbsp. water and let it come to boil. Cook the mixture over medium heat until it becomes light brown.
Add 200g crushed hazelnuts and 200g chopped almonds. Lightly spread the mixture over the jam.
Bake for 30 minutes at 180 C°
Cut the warm dough in squares and then in triangles.
Melt 200g dark chocolate and carefully dip the corners of your cookies into the melted chocolate. Carefully place the cookies on a piece of parchment paper and let cool for a few minutes before serving.
